      Before sitting down to eat, guests can explore the period salons, adorned with antique parquet floors and delicate stucco work, or, on sunny days, dine on the intimate terrace of the inner courtyard, sheltered from the hustle and bustle.       Seasonal, creative and rooted cuisine

      Behind the stoves, chef Philippe Birckel, a local, offers inventive and generous cuisine, inspired by local Gers produce and enriched with influences from elsewhere. The menu evolves throughout the year, with four to five changes per season, to reflect the cycles of nature and the freshness of the ingredients.

      Among the signature dishes are refined creations such as compressed semi-cooked foie gras, duck confit cannelloni, all-duck cassoulet with broad beans and cumin, and pan-seared foie gras with a port and cocoa sauce. For dessert, the prune and Armagnac soufflé stands out as a must-try specialty, combining Gascon sweetness with technical mastery.

      The philosophy of the house is based on respect for the product, a touch of audacity on the plate and a sense of detail that will delight lovers of contemporary gastronomy rooted in its territory.
