From November to March, fat markets are held in the towns of Samatan, Fleurance, Gimont, Eauze and Seissan, where you can find the best duck for cooking. Of course, foie gras is one of their specialties, often bearing the “Bienvenue à la Ferme 100% Gers” label, which guarantees a quality product.
