The pastry chef possesses precise and unique expertise! The dough is first kneaded the day before, lightly oiled, and then left to rest overnight.
The next day, it is gently stretched to a thin thickness and then dried using fans. This technique ensures a light and airy texture.
The filling consists of thinly sliced apples steeped in homemade Armagnac. Assembling the croustade involves layering the pastry and filling, creating a dessert that's both crispy and soft. A true treat for the taste buds!
In addition to the classic apple version, innovative variations are offered, such as the apple and prune crumble, or the combination of pears and chocolate, not forgetting the combination of apple and foie gras.
