This dessert, also known as pastis gascon, is distinguished by its thin and crispy puff pastry, filled primarily with apples and Armagnac, a renowned brandy from the region. The pastry chef has precise and unique expertise! The dough is first kneaded the day before, lightly oiled, then left to rest overnight.
The next day, it is gently stretched to a thin thickness, then dried using fans. This technique guarantees a light and airy texture.
The filling consists of thinly sliced apples soaked in homemade Armagnac. Assembling the tart involves layering several pieces of pastry and filling, creating a dessert that is both crisp and melt-in-your-mouth. A true delight for the taste buds!
Besides the classic apple version, innovative variations are offered, such as the apple and prune crumble, or the combination of pears and chocolate, not forgetting the combination of apple and foie gras.
The crumble is usually served warm, sprinkled with icing sugar, and accompanied by a scoop of vanilla ice cream or a dollop of whipped cream, to each their own!
