The croustade is a signature pastry from Gascony. This dessert, also known as , is characterized by its delicate, crispy puff pastry, mainly filled with apples and Armagnac – a renowned local brandy. The traditional recipe is passed down through generations, reflecting the rich culinary heritage of the Gers.

The chef holds a precise and unique know-how! The dough is kneaded the day before, lightly oiled, and then left to rest overnight.
The next day, it is delicately stretched to an ultra-thin layer, then dried with fans. This technique ensures a light and airy texture.
The filling consists of thinly sliced apples infused with homemade Armagnac. The croustade is assembled by layering several sheets of dough and filling, creating a dessert that's both crisp and melt-in-the-mouth. A true delight!
Beyond the classic apple version, innovative variations are offered, such as apple & prune, pear & chocolate, and even the bold combination of apple and foie gras.
Croustade is typically served warm, dusted with powdered sugar, and accompanied by a scoop of vanilla ice cream or a dollop of whipped cream – to each their own!
